Freezer Cooking Plan

Since I have a sick little one that I will be staying home with a few days this week, I thought it would be a good time to do a quick freezer cooking session.  Here's what I have planned:

peanut butter and jelly sandwiches
mix and match muffin mix
chocolate chip muffins
pancake mix
waffle mix
butterhorns (some with chocolate chips)
baby food--roasted butternut squash, steamed green beans and peas

So excited to have some things in the freezer again!

Freezer Cooking Update

Well, it took me nearly 2 weeks, but I finally finished everything on my freezer cooking plan.  I have to say, my hubby does not seem too excited about mashed potatoes or mac and cheese from the freezer, but we shall see.

My Freezer Plan:

easy banana bread
homemade applesauce
applesauce bread
meatballs
pizza dough
refried beans

macaroni and cheese
mashed potatoes
peanut butter baked oatmeal
apple baked oatmeal

The banana bread was delicious and is already almost gone.  The baked oatmeal wasn't a huge hit for us but will still definitely get eaten.  I feel like I have plenty of breakfast food in the freezer to tide us over for a while once I go back to work.  This week I have a few meals on the menu that will give us some food for our freezer.  Yay!

I love to see other people's freezer cooking ideas.  What's on your freezer plan?

Freezer Cooking Plan

I am still working on stocking my freezer since I will be returning to work in less than a month (so sad!  I'm not looking forward to leaving my kids!).  I had it pretty well stocked, then Hurricane Irene came through and we lost some of the things in our freezer and fridge.  I have lots of breakfast goodies that I have frozen like applesauce bread and banana bread.  I also have some marinated meat that can just be defrosted and baked, as well as pre-breaded chicken strips.

Personally, I like to do my freezer cooking a little bit at a time.  I love having the extra food on hand for easy meals but I find that trying to prepare food for 8 hours straight is exhausting and difficult with 2 young children.  Lately, I've been taking an hour or two every few days while the kids are napping to prepare a couple of recipes that I can pop in the freezer.  This freezer cooking plan will occur over the course of several days.  Once I finish, I will share pictures and let you know how it went.

What's on your freezer cooking plan?  What great freezer recipe do you have to share?

Freezer Cooking Update

I spent the day freezer cooking while my daughter was at school and my son was napping.  I can't believe how much I accomplished in just a few hours.  We have the beginnings of several meals in the freezer now and a new breakfast for my daughter.  I am looking forward to trying some of the new foods we have to choose from.

Here's what I made today:
  • 3 containers pizza sauce
  • pizza dough for 4 pizzas
  • 5 containers pasta sauce
  • 2 pans pasta bake
  • 1 jar homemade Bisquick mix
  • 10 fruity breakfast burritos
Yum!
