It's really starting to cool down here which is inspiring me to search for some yummy fall recipes. I can't wait until it's cool enough for chili, beef stew and soup (my hubby insists that it has to be COLD before we enjoy these yummy dinners)! I return to work next week so I'm working on a month-long menu plan. That way, I can get the majority of my shopping done at one time and know what we're eating each night. We tend to rearrange our dinner plans throughout the week and usually end up leaving off at least one of our meals because of other plans. I'm sure I'll have to scrap some things on our monthly plan but I'm hoping it will make it much easier for me once I return to work. Here's this week's menu:
Sunday--fried chicken--hubby will be making this in the fish fryer outside as I do not deep fry chicken in my house....
Monday--loaded baked potato soup, bread
Tuesday--cheesy pork chops, green beans, cheddar garlic bread (tried this last week and it was really yummy BUT I heated the milk mixture too much and killed the yeast--can't wait to try it with the correct rise!)
Wednesday--baked cheesy penne pasta with crockpot marinara (ended up using jarred sauce last week--so will make this and put extra in the freezer)
Thursday--baked garlic parmesan chicken
Friday--hamburgers, oven fries
Saturday--crockpot chicken thighs
I'm looking for meals that require little prep for when I go back to work (crockpot, freezer, something easy to prepare after work)--would love to hear your ideas! What's on your menu plan this week?

Thanks for the comment on that yeast. Might be something I wouldn't pay enough attention to, and it looks like a recipe I might want to try someday!
