Menu Plan Monday--week of April 22


I picked up some great deals at the grocery store this week!  I love when my store has double coupons up to $2.  I picked up 2 packages of cheese ravioli for $.50 each, Nathan's hot dogs for $1.50/package, pork chops for $1.79/lb. and Kraft Fresh Take for free!  Many of these items will be making it onto our menu plan this week.  I also still have tons of chicken dishes in the freezer from my mega chicken freezer cooking session earlier this month.  Yay for easy meals (especially when the weather is so beautiful and the last thing I want to do is be inside cooking)!

Sunday--marinated chicken, mashed potatoes, sweet cornbread muffins
Monday--Nathan's hot dogs, french fries
Tuesday--chicken casserole
Wednesday--cheese ravioli with spaghetti sauce, garlic toast
Thursday--Kraft fresh take chicken breasts
Saturday--hamburgers

Menu Plan Monday--week of April 15


My daughter's birthday is this week.  We had her party this past weekend but we will be taking her out to dinner to celebrate at the restaurant of her choice--probably Chick-Fil-A or Bojangles.  The rest of this week will be pretty simple.  I'm using up some of the MANY chicken dishes I made and stored in the freezer.  It's so nice to have a full freezer to choose from--but I wish I had something more than chicken!


Sunday--leftovers from my daughter's birthday party
Monday--out to dinner for my daughter's birthday
Tuesday--Mexican night--tacos, taquitos, refried beans
Wednesday--parmesan chicken tenders, roasted potatoes, green beans
Thursday--sausage, corn, mac and cheese
Friday--marinated chicken on the grill, mashed potatoes, mayonnaise muffins
Saturday--hamburgers on the grill, french fries

Quick, Easy and Cheap Chicken Recipes

Chicken is one of my favorite kitchen staples.  I usually purchase chicken breasts on sale for $1.79-$1.99/lb.  I also enjoy using whole chickens and drumsticks.  Chicken is served at least a couple of times a week in our house.  Here are a few of my very favorite chicken recipes:

Rachael Ray's Chicken in Mustard Sauce--This recipe offers several variations but we love the original recipe so much that we have never even tried the variations.  The mustard sauce served with this chicken is delicious.  And since the ingredients are basic: chicken breasts, thyme, chicken stock, dijon mustard and sour cream, I almost always have them on hand and can prepare this as a last minute meal.  I have served this several times to guests because it is so yummy!  Hope you enjoy as much as we do!

Crockpot Buffalo Chicken from My Kitchen Apron--perhaps one of the easiest chicken recipes I have ever made.  If you fill your crockpot, this can make a lot of chicken.  I have shredded it and used leftovers for other recipes, such as buffalo chicken pizza.  I have also put this leftover chicken in the freezer for future use. 

Easy Peasy Chicken from Mommy's Kitchen--Since chicken legs are on sale for a great price quite often, this meal is very frugal.  It takes just minutes to prepare and requires very few ingredients.  I love that this easy BAKED chicken comes out so crispy and yummy.   While very quick to prepare, these do take quite a while to bake so be sure to give yourself time to cook these!

BBQ Chicken Haystacks from Cooking During Stolen Moments--This is a super simple, versatile and easily adaptable recipe.  I have also seen haystacks made using fritos, refried beans, taco seasoned chicken or beef and cheese.  Either version is quick, easy and yummy!

Whole Chicken in the Crock Pot from The Happy Housewife--I like this recipe because I can season the chicken any way I like, it takes very little time to prepare and it can cook while I'm away at work.  I also love that I can easily make chicken stock with the bones.  Plus, even a small whole chicken usually gives our family enough meat for two meals.

Saturday--out to dinner for my father-in-law and daughter's birthdays

Menu Plan Monday--week of April 1

I scored a great deal on chicken breasts today.  My local grocery store had boneless, skinless breasts on sale for $1.59/lb!  I think that is the cheapest I have ever seen chicken breasts before.  I stocked up and am planning on going back for some more.  I am planning to freeze some in marinades, divide some up in 1 1/2 lb. packages and make some freezer meals this week with some of it.  I am on spring break this week so it's perfect timing for some freezer cooking!

Sunday--hamburgers, tator tots, fruit salad
Monday--cheesy chicken breasts (triple batch for freezer)
Tuesday--ranch house pork chops with parmesan mashed potatoes (I will be trying this in the oven rather than the crockpot)
Wednesday--chicken casserole (making this is 4 8x8 pans and putting 3 in the freezer), biscuits
Thursday--spaghetti and meat sauce
Friday--parmesan chicken tenders (triple batch for freezer)
Saturday--chef's choice
