These were a big hit at my house! My husband claimed these were better than any you would find in a bakery. I used fresh strawberries for this yummy recipe.
1/4 cup oil
1/2 cup milk
1 egg
1 tsp. vanilla
1/2 tsp. salt
2 tsps. baking powder
1/2 c. white sugar
1/4 c. brown sugar
1/2 tsp. cinnamon
1 3/4 c. flour
1 1/2 c. finely chopped strawberries
Cinnamon Sugar Topping
1 tbsp. sugar
1 tsp. cinnamon
Preheat oven to 375 degrees. Grease 12 cup muffin tin.
In a small bowl, beat oil, milk, egg and vanilla lightly. In a seperate bowl, mix flour, salt, baking powder, sugars and cinnamon. Stir in chopped strawberries. Add milk mixture and stir to moisten.
Pour mixture into muffin cups. Combine cinnamon and sugar for topping. Sprinkle on top of muffins. Bake for 25 minutes.
