Freezer Cooking Update

Well, it took me nearly 2 weeks, but I finally finished everything on my freezer cooking plan.  I have to say, my hubby does not seem too excited about mashed potatoes or mac and cheese from the freezer, but we shall see.

My Freezer Plan:


easy banana bread 
homemade applesauce 
applesauce bread 
meatballs 
pizza dough
refried beans

macaroni and cheese
mashed potatoes
peanut butter baked oatmeal
apple baked oatmeal

The banana bread was delicious and is already almost gone.  The baked oatmeal wasn't a huge hit for us but will still definitely get eaten.  I feel like I have plenty of breakfast food in the freezer to tide us over for a while once I go back to work.  This week I have a few meals on the menu that will give us some food for our freezer.  Yay!

  1. I did some freezer cooking for the first time this month with the new baby on the way and our freezer is packed - I usually just doubled what I was making for supper that night. You have some great breakfast items - how handy in the morning! What pizza dough recipe do you use and how do you freeze it? That's another great idea. Thanks!

    I have tried a couple different pizza dough recipes but this is the one I've been using most recently: http://www.ourbestbites.com/2008/04/breadsticks-and-pizza-dough/

    When I freeze dough I usually just double the dough recipe. I spray the inside of a freezer-safe Ziplock bag with cooking spray (so the dough will not stick to the bag) and place enough dough for 1 pizza in each bag. Then I put the bags into a gallon size freezer bag. When I'm ready to use it, I just put it in the fridge to defrost. It's really easy and I LOVE having it on hand because it takes so long to make pizza dough!
