Crispy Cheesy Potatoes

4 medium potatoes
garlic powder
Old Bay seasoning
1 cup cheese (I used a white cheddar/sharp cheddar mix)

Peel potatoes and cut into small cubes.  Season liberally with garlic powder and Old Bay seasoning.  Heat 2-3 tablespoons vegetable oil in a large skillet.  Add poatoes to hot oil.  

 Fry potatoes in a single layer, turning occasionally until crispy on all sides. 
Top with cheese and allow to melt.
